Ingredients:
One whole gammon weighing 10-13 kg 2 dessertspoons mustard 1 teaspoon sugar Breadcrumbs Whole cloves
Preparation:
Preheat the oven to 100-125 °C (convection 80-100 °C).
Place the gammon, fat side up, on a wire rack. Fill a baking tray with water and insert in the oven underneath the wire rack to keep the air in the oven moist. Replace the water as soon as it has evaporated.
Bake the gammon for about 60-70 minutes per kilogram. Half an hour before the end of baking time, remove the crust carefully from the hot gammon.
Mix the sugar and mustard and baste the gammon with this. Then coat with breadcrumbs and stud with cloves. Return to the hot oven (250 °C) briefly to brown.
Accompaniments:
Serve with potato, liver, carrot or rutabaga casserole and a glass of beer or vodka. |
