Spicy stir-fried pork fillet with basil
Dish from Thailand

Ingredients (for 4 people):
350-400 g pork fillet 3 tablespoons oil 1 clove garlic 5 birdseye chillies (very hot!) 5 tablespoons chicken stock 1 tablespoon fish sauce 1 tablespoon sugar 1 tablespoon dark soy sauce Thai basil
Preparation:
Cut the pork into bite-sized pieces, finely chop the garlic and the birdseye chillies. (If you want the dish to be less hot, remove the seeds from the chillies before chopping.)
Heat the oil in a wok (or frying pan). Add the pork with the garlic and birdseye chillies and stir-fry briefly. The meat should be almost cooked, but still juicy. Then add the chicken stock, sugar, fish sauce and soy sauce and season to taste.
Finally, chop the basil and stir it into the meat.
Serve with Thai jasmine rice.
Note: This dish can also be made with chicken breast fillet instead of pork.
