Marinated kid stew
Spanish dish

Ingredients for 8 people:
2 kg kid meat
1 red pepper, seeded
2 cloves garlic
2 tablespoons crushed oregano
1 tablespoon coarse sea salt
1 cup olive oil
1 cup wine vinegar
5 sprigs thyme
2 bay leaves
1 glass white wine
Preparation:
Cut the kid meat into bite-sized pieces. Pound the red pepper, garlic, oregano and salt to a paste with a pestle and mortar. Stir the wine, vinegar and oil to make a marinade, then add the thyme and bay leaves. Pour the marinade over the meat, cover and leave in a cool place for 1 day to allow the meat to absorb the flavors.
Remove the meat from the marinade and fry briskly in olive oil. Bring the marinade to the boil and pour over the meat. Simmer over a low heat for approx. ˝ hour until the meat is tender.
Serve with potatoes.
Note:
Lamb may be used instead of kid meat.
