Tortillas with pork – Tacos al Pastor (shepherd-style tacos)

Ingredients for 4 people 600 g pork (preferably neck) 1 large onion A few coriander leaves 1 lemon
For the marinade 25 g achiote 1-2 red chillies according to taste 1 tablespoon mustard Salt Oil
For the salsa taquera 1 red tomato 1 green tomato 1 onion 1 clove garlic 2-4 chillies according to taste 0.5 l meat stock Salt
Corn tortillas
The original recipe uses achiote, a spicy paste with a slightly earthy taste that is widely used in Central America and gives a rich golden red color. However, these tortillas taste good even without achiote if you add a little lemon juice and sugar to the marinade.
Preparation To make the marinade, break the achiote into small pieces, finely chop the chillies and stir in the mustard, salt and oil. Cut the meat into slices 1 cm thick, pour over the marinade and leave to stand overnight.
For the salsa taquera, finely chop the onion, garlic and chillies and fry in oil. Add the diced tomatoes, pour in the meat stock and simmer for ½ hour. Adjust the seasoning, puree in a mixer and set aside.
Brown the meat on all sides in a little oil, reduce the heat and continue cooking until tender. Remove from the pan and cut into thin strips. Heat the tortillas (preferably in a frying-pan without fat), chop the onion and coriander, cut the lemon into quarters.
Fill the tortillas with meat, onion and coriander and pour over the sauce or serve it separately with the lemon quarters.
