Pork stew

Mexican dish

Ingredients for 4 people
800 g stewing pork
200 g potatoes
3 carrots
2 corn on the cob
Oil

For the salsa
6 green tomatoes (or tinned tomatillos)
1 large onion
2 cloves garlic
3 red chillies, according to taste
A few coriander leaves
1 tablespoon sesame seeds
½ teaspoon cumin

Preparation
Either finely chop the salsa ingredients or pound them with a pestle and mortar or mince them in a mixer until a creamy paste is obtained.

Brown the meat quickly on all sides, add salt and the salsa, bring to the boil, then simmer over a low heat for 1 hour. Coarsely chop the carrots and potatoes, slice the corn on the cob and add to the saucepan. Add water to cover and continue to simmer for another hour. Adjust the seasoning and serve.
