Bobotie

Ground beef pie from South Africa

Ingredients
500 g ground beef

2 slices white bread
3 small onions
3 teaspoons curry powder
4 cloves garlic
2 cm fresh ginger
1 tablespoon lemon juice
50 g raisins or sultanas
Nutmeg
2 tablespoons mango chutney
6 dried apricots
50 g slivered almonds
5 fresh lemon leaves
Salt
Black pepper
Butter for greasing the dish
3 eggs
125 ml milk

Preparation
Soak the bread in water, then squeeze out the excess. Finely chop the onions, ginger, garlic and the dried apricots. Add to the ground beef together with the raisins, slivered almonds, mango chutney and one egg and mix thoroughly. Season well with curry, lemon juice, salt and pepper. Place the mixture in a buttered baking dish, insert the lemon leaves vertically into the mixture and bake in a preheated oven at 220 °C (425 °F) for 20 minutes.
Whisk the milk with the remaining two eggs and season with nutmeg, curry and salt. Pour the egg mixture over the pie and continue baking for a further 15-20 minutes.
