Gyouza ("potstickers") - filled dumplings

Ingredients for 4 people, approx. 50 dumplings

For the dough
200 g cornstarch
200 g flour
1 teaspoon salt
200 ml hot water

For the filling
300 g ground pork
1 onion
1 clove garlic, crushed
1 inch (2.5 cm) fresh ginger
100 g bamboo shoots
2 scallions
8 medium-sized fresh shiitake mushrooms
Salt, sugar and soy sauce  

 

Preparation
First, mix together all the dry ingredients for the dough, then add the hot water, stirring constantly, until the mixture is smooth and elastic.

Divide the dough in two and shape each half into a roll about 40 cm long. Wrap in cling-film and leave in a warm place. Finely chop all the vegetables for the filling, knead together with the ground meat and season to taste with salt, sugar and soy sauce. Divide each roll of dough into 25 pieces and roll into flat circles. Place a spoonful of filling on each circle, then fold the dough over and press first the ends, then the center of the dumpling together.

Place the ready dumplings in boiling water and cook until they rise to the surface (about 3 minutes).

Serve immediately with soy sauce.
